The Josper HJA-PLUS-M120 is a medium charcoal oven engineered for professional kitchens serving approximately 120 diners. Built on the proven Class A design, this model combines reliability with enhanced performance through the new HJA-PLUS standard. Key features include an improved hydraulic door locking system for streamlined operation, redesigned upper and lower vents for superior air circulation and easier maintenance, and an optimised upper tempering area with customisable accessories. The oven reaches full temperature in about 35 minutes and operates independently for 9 hours per load on 12-16 kg of daily coal consumption. Performance specifications: approximately 90 kg production per hour with braising temperatures ranging from 250 to 350 °C.
